Reuben Casserole

This is seriously the easiest recipe and it was pretty much a hit in my house.

I was never a fan of sauerkraut but, I’m pretty sure I nailed it with this recipe.

So here’s exactly how I made this:

I cooked my brisket ahead of time and then once it was cooked, I let it cool. Once it was cooled, I cut it up into small squares and spread them on the bottom of a 9 x 13 pan.

I drained my sauerkraut and put in 4 pieces of cooked bacon along with the bacon grease, yep, it gives it flavor.

I spread the kraut over the corned beef and then topped it all with the shredded swiss cheese. I cooked it in the oven at 350 for roughly 25 minutes.

Once the cheese is all melted, it’s pretty much dinner time!!

You can also make a sauce to top it all with but I didn’t do that. I will next time for sure.
