TWICE BAKED CAULIFLOWER
LOW CARB!! LOW CARB!!
Preheat oven to 350.
Cook bacon in pan until crisp, set aside.
Cut out stem and core of cauliflower and cut into small pieces. Cook in large pot of boiling water until tender. Drain and return to pan and mash with a potato masher. There will still be some small chunks don't worry.
Mix in cream cheese and sour cream. Pour mixture into a glass dish.
Sprinkle with cheese and crumbled bacon. Bake 30 to 35 minutes until hot and bubbly...ENJOY
